BIRTH OF A CELLAR
Founded in 1932, the Agricultural Cooperative Society “La Fontésole” was born from the desire to combine knowledge and common aspirations. It brings together around 110 wine growers. It is administered by a Board of Directors composed of 12 members, elected by the ordinary general assembly composed of all members. The cellar's strategy is to continue moving its offering upmarket with the greatest respect for the environment. It is thanks to mastery, modernization of means and constant innovation that it has been able to produce authentic, quality and recognized wines.
The winery cellar grows by investing each year in better production, winemaking and storage tools. Between pneumatic presses, underground cellar for barrels, air-conditioned hangar and tasting cellar, it aims to be at the cutting edge.
The winery cellar was created at the initiative of the Fontès producers, first to vinify whites, mainly the Clairette grape variety. After the war, reds and rosés gained momentum and around 1985, Fontès began bottling.
Part of the production is integrated into the Languedoc Appellation.

At the same time, the winery cellar begins an in-depth analysis of its terroirs, implementing a geo-pedological study of the soils and the establishment of a plot reference, coupled with multiple experimental vinifications. The objective of this approach is to master the range of typicity offered by the vineyard.
The winegrowers of Fontès, associated with their colleagues from Pézenas, submitted a file to the I.N.A.O. collectively requesting accession to the Languedoc Appellation with the commune name of “Pézenas”. Use was obtained in 2006.
The winery cellar purchased 2 pneumatic presses.
Installation of 12 self-emptying and temperature-regulated stainless steel tanks with a capacity of 6,600 hl.
Construction of a storage shed (600 m2, 450,000 bottles), construction of a thermo-regulated barrel cellar.
