ITS DIVERSITY

The Fontès vineyard extends from Caux to Péret, and from Neffiès to Nizas. It is marked, on the one hand, by a volcanic flow blocking the landscape from north to west as far as Pézenas, and on the other hand, by a very marked Villafranchian ridge from Nizas to Péret. Without forgetting the Céressou volcano, remarkable for its Strombolian type.

The vines regenerate their roots in volcanic and basalt soils.

It is cultivated on terraces under the influence of a Mediterranean-type microclimate which lends itself admirably to the production of exceptional AOP Languedoc wines. It also produces IGP Pays d'Oc in white, rosé and red.

It is thanks to this grouping of winegrowers that the cellar benefits from a vineyard composed of several landscapes. It is this mosaic of soils that brings character to our wines. There we find black soils covered with basaltic lava flows, vast terraces of rolled pebbles, limestone and schist, clayey soils and sandy marine soils. So many assets which give richness and typicality to our vintages. It is from this generous nature that our wines are born!

WORK IN THE VINEYARD

December - January : This is the start of pruning. The winegrower chooses the branches to keep in order to determine the quality and yield he wants. There are several types of cut: single Guyot, double Guyot, Cordon de Royat, Gobelet.

February : Pruning continues, cuttings can be taken for future plantings.

March : Before the resumption of the vegetative cycle, he carries out the final pruning.

April : It’s time to plant and train. He ties the branches to support them with wire stretched by stakes.

May : It treats the vines against attacks of powdery mildew, downy mildew and leaf fall.

June - July : It joins and cuts branches that are too long. It’s also time to eliminate the biggest gourmands.

August : Some green grapes are removed to promote development and improve the quality of the remaining grapes.

September - October : After carrying out samples and maturity checks, it is the most important stage: the harvest.

November : He lifts his feet to protect them from freeze.
